I am so excited to share with you my weekend get away I took to Utah. I should clarify that by weekend getaway I mean it was around 36 hours round trip, but it was 36 hours straight for the soul. Best news yet, I leave again for another one next week. And my packing list is already done, because its exactly the same:
- Hunter Boots- for impromptu hikes or freezing journeys to the grocery store.
- Wellys- for……the jelly to my peanut butter Hunter Boots
- North Face Parka- for the mountain temps but still staying chic-of course.
- Southwest Drink Coupons- for the most obvious of all reasons.
- Buckeye Rock Em Socks- for the Buckeyes playing on Saturday and me being the biggest fan. (and bought bae matching ones)
- Zara Velour Knit- for it being my most photographed and worn sweater of all time.
- Camera- for the blog and readers like you, duh.
- Baby Lips- for my dry crackly lips and because I forgot it last time and Utah is one dryyyyyy biatch.
My Southwest Weekend Procedure:
In order to take as many of these weekend trips as I can (#longdistanceprobs) I have to be sure I am getting the lowest dollar prices and “points” prices on Southwest. To do this, I book tons of trips that I never actually take. If I know I am going to have a weekend off I will book a trip to a city in points or on my Southwest card months in advanced in order to get the sales price. Southwest last minute flights are NOT cheap. When the weekend rolls around I either 1. go on the trip OR 2. cancel the trip and get all my points back or use the money from the cancelled flight toward a new trip down the road. I am a strong believer that Southwest has saved my life and relationship a hundred times over, we all deserve that sort of flexibility-ha! Given, you fight the uneasy elements of 7 baby families and weird boarding procedure on Southwest, but hey, this has saved me loads of money and headaches so I’ll weather the storm.
Besides my packing list staying exactly the same…. I am totally going to recreate a portion of last weeks cheat meal—> Jameson’s Cracked Out Pumpkin & Dark Chocolate muffins.
Jameson's Cracked out Pumpkin & Dark Chocolate Muffins
Easy peasy lemon squeezy muffin recipe. Moist and sweet treat for the fall & winter season.
- 1 box Duncan Hines Spice Cake
- 1 can Pumpkin real pumpkin, not pie filling
- 1 cup Milk 2%
- 1 bag Dark Chocolate Morsels 3-4 per muffin
Preheat Oven to 350 degrees
Whisk together all of the ingredients in one bowl- omitting the dark chocolate morsels.
Grease mini muffin tin.
Fill each 3/4 of the way full
Add 3-4 chocolate morsels on top of each muffin.
Bake for 10-12 minutes
Let cool on wire rack & enjoy!
AND last but not least. THE spot in Utah that calls my heart.
The Diner that overlooks all the mountain in Utah and gives you a fur or flannel blanket to cuddle up with while you eat. Not to mention the Sourdough Pancakes, Crab Omlette, or the Guru Dave Powers Spuds… Sold. The rest of the menu found here.
We go here everytime I am in Utah because the food and views are the best. Its up a little ways in Brighton, Utah but its worth the windy drive up the mountain every time.
Plus, its super romantical (people get married there and stuff) meaning you can prolly get your boyfriend to take a pic with you if you buy him the decadent Hot Chocolate… I don’t know, not speaking from experience or anything.
